In my upgrade process I'm considering replacing the 105 shifters with modern 5700s. As the Shimano compability webpage is off line, here are my questions:

1) Will 5700 shifters work properly with a 6600 GS rear derailleur?

2) Will 5700 shifters work properly with a 5600 front derailleur? And...

3) The original brakes are Shimano, but I don't think they're 105s; so do I need to replace them too?

Yes to questions 1 and 2, no issues. You won't need to replace your brakes.

No problems here.

It was the 5800/6800/9000 generation that Shimano changed the shifting cable pull ratios. 5600/6600/7800 shifting components play fine with 5700/6700/7900.

As far as braking, cable pull ratios changed between 5600/6600/7800 and 5700/6700/7900. However, the way you are going - 5700/6700/7900 shifters with 5600/6600/7800 brake calipers will work. The other way around will be too spongy.
