Hello all - I came up on an great deal on a 2004 cannondale r3000 with full dura-ace for $1380. Only issue is there is only one bike and it's 56cm. My question is, can this bike be adjusted enough to fit me and ride well by a bike shop? I am 5' 8" with a 31 inch inseam.
Any help is appreciated, thanks!

You might be able to get away riding a smaller bike by extending a seatpost. It's the bigger bikes that are the problem. You need at least a 32 inch inseam to ride that one.
