My bike has Campy Record 8 speed currently. Can I use my 8 speed cassette on the newer wheels? I'm considering upgrading to something like Campy Protons or maybe hand built with Record hubs.

I'm new to the road bike world so forgive me if this is a dumb question.

You shouldn't put a Campagnolo 8spd cassette directly on 9/10spd hub (it will fit, but it might damage the freehub body if used heavily), but you can convert a Veloce 9spd cassette to 8spd. Veloce 9spd cassettes have all loose sprockets (no sprockets are mounted to carriers), so you can remove the largest sprocket and replace the 9spd spacers with 8spd spacers.
