Why? Older frame that won’t allow a 28c to clear the brake mounts on the seat stays.

My fork is newer and seems to have enough clearance for a 28c.

Anyone done this and wonder if there is any benefit than just sticking with 25c on both?

You shouldn't have much problem with it. You'll run lower pressure in front and have a nicer hand feel. Just remember, when your at the limit your front will have more traction as it is bigger. Usually you would want that anyway.

Think my OCD would prevent me from doing that but I see no harm in it, I run the opposite on 3 bikes and love it.

I run a 48mm on the front and 42mm on the back, as that is the widest that fits. The wider front gives more suspension and traction especially off-road.

Mine was in the context of my 650b gravel wheels, in case that wasn't obvious. For road, I use 38mm slicks front/back, but maybe I should put in a larger tire in the front. At some point, toe overlap becomes an issue.

But 28 front, which is what you were asking about, should be fine. (I can get 28mm front/rear on a 1980s bike.)

I've done it before with a 30 in the front and a 28 in the back for the same reasons with no issues. Mountain bikes are set up this way frequently.
