He guys,

I've been riding my bike over a year now and generally happy with it. The one thing I'm unhappy with are the brakes. Even after adjusting and thightening them.

I'm looking to replace my Sora brakes with a 6700 Ultegra brakeset and Dura Ace brake shoes.

Is this possible?, and if so, is this an upgrade you would recommend or should I look for other ways to upgrade the brakes?

Try some Koolstop pads and holders first. I like the dual compound for mostly dry. The salmon compound for wet.

Also, the DuraAce pads are decent, but I like the koolstops better.

+1. Better pads will make a big difference. Calipers, much less difference, at much greater expense.

Yeah, what J said.

Also make sure that your calipers are clean and working their best. I've seen some neglected calipers (especially rear) that were dirty/gummed up and didn't work anywhere near as well as they should have.
Check your cables too.
