did or does campy make 10 speed brifters that only shift upwards one cog at a time,(from small to big)? cause i'm a new campy user with current centaur and not yet comfortable with the large sweep of gears cause when i only want to change up one it goes up a little higher then drops down to where i want the chain to be. the veloce brifters are very sensitive and i would like to be able to change without this 'delay' of the chain dropping back to the gear i want. it has only about 1500km on the road so i am still getting used to it. apart from this campy seems good as i was on 9 speed ultegra.

I am not certain I am reading your question right but here it goes:

1. Your rear derailleur may be out of adjustment.

2. You don't have to sweep more than one gear if you don't want to. Don't push the lever as far.

I have a set of Veloce shifters, non-QS, and if you look at the way they shift when you have the bike on a stand you can see that they seem to be designed to give that little bump up too far in order to drop back where you want to be. With a little practice while watching I was able to adjust my pressure to get either way; the quick shift or the more positive shift. Try practicing with the bike on a stand and you will likely get the feel that you want.

You mention both; do you have Veloce or Centaur, and QS or older?
