Is there any reason that a Campy crank (Record or Chorus) cannot be used with Shimano DA derailleurs (F&R) and chain?

No, no reason, but you'll need a different bottom bracket as well.

I do it all of the time on my kid's bikes

Works fine. I'm a little too much of a Fred to do it on my own bikes as everything HAS to match.
