Have an old Schwinn panther that I am putting in riding condition. Winding up replacing nearly everything which is more than I really need to do. This bike is styled as a balloon tire "paper boy" bike, but mtb dimensions. Single speed, comes with der mounts.

Rear brake is u-brake mounted under chain stays. Am looking on e-bay for replacement and note that many brakes are listed as being for bmx.

Is there a separate brake for bmx as opposed to mtb? Any key words or knowledge that would clue me that I am looking at one that will (won't) go on my bike?

It's all about the reach. Make sure the pads can get to where they need to be and can accommodate the tires you plan to use.
