If it really is a 49" frame, it is probably too small for someone 5'7". Depends on how it is measured, etc.

Most would recommend a 170-172.5mm crank, though I don't think it makes much difference.

The length of the derailleur cage depends on the difference in your large/large chainring/rear cog and small/small. The cage has to take up the extra chain when you go to the small/small. For Shimano, a triple uses a long cage and a double crankset uses either.

These are very basic questions to be asking if you intend to buy your own build. Read and ask a lot before buying.
