Odorless Mineral spirits, Simple Green, Dawn dishwashing detergent.
I use Zep Commercial Heavy Duty Citrus Degreaser. I buy this by the gallon at Home Depot. Works pretty good for just about everything. I really like it for cleaning tires as well as chains, rings, cogs and other greasy bits.
DO NOT buy citrus degreasers at your LBS. Too $$$
I also like Oderless Mineral Spirits, even thought the stuff really isn't oderless at all.

Yes. OMS will very quickly cut through and thin out any caked on grease, waxy chain lube, road tar, etc. Then dish detergent takes it all off.
Simply Green and other similar cleaners are OK don't work anywhere near as well as OMS, and can cloud unprotected shiny aluminum surfaces. Also, it degrades any lube or grease in chains, bearings and pivots it comes in contact with where OMS won't and will evaporate leaving lube and grease intact, as long as it hasn't washed it out.
