I know if I have a double up front, I need a GS derailleur for Shimano Road components. Do I really need that with a 1x up front and an 11-32 in the back? Or will a standard length cage work fine if I don't have a big ring in the front?

Of course you need the GS, you're using a 32t cog. It's not just chain wrap you have to worry about it's the largest cog. The GS cage offsets the upper pulley so it will clear the large cog.

Generally yes, but there are exceptions. I can run a 32T cog with a standard Dura Ace 9000 rd on my Domane. Is it the 9000 that makes it work or the particular derailleur hanger or both? I do not know, but it works.
