What are your favorites? I know they can be much more difficult to find compared to clincher models...
I'm leaning towards either Ksyrium ES tubulars, or shimano 7801 (not the scandium 'tubeless') tubulars....
Any other favorites?? For me, I need them to be available with a shimano freehub..

Mine are 32s Mavic Reflex on Chorus hubs. Just substitute your Shimano hub of choice.
Yeah, I've built many sets of wheels for myself, and i know they are the best bet for the money and durability. But I confess, I like the 'looks' of a lot of the prebuilts.

Well I have not ridden the Kysrium tubulars, but their clincher versions are pretty bomb proof and have quite a few miles and a couple of race seasons on a pair of those.

Speedcomposites.

Erik Dekker even bought a pair of their carbon rim wheels for his last races instead of using his Rabobank team supplied Shimano wheels.
