How many days off the bike before you believe you can start feeling a dip in your form? Two days, three days, four days? I know this is very subjective and a lot is determined by your fitness level before you take a few days off. Also a lot of your residual (base) fitness will be unaffected, but your top end is the first area to suffer. So how long?

varies too much

to say anything useful, but I think it definitely takes longer than a few days. In fact, in some situations (e.g., fatigue or overtraining) your form will IMPROVE with a few days off.
