toss your wings in a little oil, salt and pepper, and bake at 350 for about 15-20 mins.
For BBQ wings, make sure they are fully cooked, and then smother with your sauce of choice, and done.
for buffalo wings, I like to use Louisiana hot sauce. in a small sauce pan, melt a little butter into the hot sauce, spread onto wings, then put them back in the oven for about 5 mins. I know this isn't an 'Official" buffalo sauce, but they come out pretty good.

Thats exactly how I do them. No they are not Buffalo but they are so good who cares. I like crystal brand hot sauce and sometimes make that garlic butter with the hot sauce instead.

Here's mine

I pepper (no salt, a ton in the sauce later on) wings or thighs (which I greatly prefer) and then either grill or bake them for an hour. If I bake em, I put them on a rack in a baking dish so the fat renders out. After an hour, I'll de-skin the thighs or keep the wings with the skin (too much work), and place the chicken in a baking dish (aluminum or glass). I'll cover the chicken with 2 large yellow onions coarsely chopped, 8-10 cloves of fresh minced garlic, more black pepper to taste, and then cover with Frank's RedHot sauce. I also add 1/2 a habanero pepper (left intact so it's easy to find), cover with foil and bake for another 30 minutes or so.

You get the heat of the habanero with the flavor of the onion and garlic. Good stuff.

I do my wings in the same rub as my pork BBQ. Cook 45 mins indirect over a low heat on the Weber. Toss in regular hot wing sauce, if desired, or use the best BBQ sauce commercially available, Interstate BBQ Sauce.
