Junior Gearing is 26' 52x14
I have 105 components. (53x12,13,14.)
What does my bike rollout to?
Which cogs Am I going to have to block off.

Oh, and one more thing, if i'm not racing in a junior race, then do i still need the junior gearing?

w/ a 53 you need to block to the 15T. and yes, you need to have jr. gears in all races, not just jrs. I'd suggest getting a 52T chainring and a 14-25 Ultegra cassette

The Ultegra cogs have the sizes you need for junior racing. I think they start at 14. Match these with a compact crank and you are set.

A compact 50T max with a smallest 14T certainly makes you legal. But when I was a junior, no junior would ever voluntarily stay that much under the limit. As sgt hedgehog said, see if a 52 x 14 on your wheels and tires gets you that 26-foot rollout. If it does (as it should), I'd go with that combo.
