Your overlooking a set of handbuilt Ultegra/Mavic Open Pro/DT 14/15 spokes wheelset. These will be significantly more serviceable than production wheels. They'll also be very durable and very lightweight (mine are under 1700 grams w/o skewers and now 7 years old).
