I'm still hoping to get a power meter sooner or later, but the city has ordered me to replace much of the sidewalk around my corner lot.

I hope to get it around the time I begin my build phase, provided more crap doesn't go wrong with the house.

Would there even be a point in keeping track of these projected numbers?

Not really, as wheel speed to power will vary by weight, tire pressure, tire compound, bearings, etc. Just do some threshold testing and make it relative to you until you get a power meter. Keep track of it for yourself and your relative improvement. A 1 mph improvement on the rollers is still an improvement.
