Try taking the road north out of Pecos. It is narrow but nice. Also, you can ride I-25 South to 285, go South and take a right towards Galisteo. If you only have time for a ride or two, take a mountain bike and ride the forest road to the top of Glorietta. This is a great ride that we do often with a awesome downhill.
You can ride on 25, there is no frontage road on that route. I know people that ride that stretch. You could take Merlin's advice if you don't want to ride the I-25. Take 25 south and exit 285 South. Take left and go to second light. Park at Chevron. OR!!, go right at Exit, then left at stop sign and park in the Bobcat Bite parking lot. Then ride 285 route south. Bobcat bite is voted top 10 burgers in US.
