The old school rule of thumb is that you can go down to a 28mm tire on wide touring rims.

If you go looking at the sheldonbrown.com website, I believe somewhere in there you'll find information how to actually measure the width of your rim, and from that measurement, determine how large or small a tire you can put on it. I would be VERY surprised if you couldn't go at least as small as 28.
