Go the Shimano's website and download the instruction sheets that come with components - you wouldn't have got these if you bought a complete "bike in a box".

Assuming you're talking about the old Ultegra 9 speed or similar, the same shifters can be set to operate a double or triple - the new 10 speed have dedicated front shifters for 2 or 3.

If you mean just the front derailleur, they don't really care how far the lever moves them, as long as the limit screws are correctly set. (if not - the chain will either not get to the ring or it'll fall off  ) Again, the Shimano instructions tell all.

Follow them exactly - and in order - and it's not that hard. Problems usually happen if folk just bolt things up and then start messing with any handy screws.

Yes, I know reading instructions is boring ;)

Shimano's website only has downloadable docs for their newest stuff. If your component if very similar to the newest model, you're OK. If not, well.......

That's hardly surprising, but if the need goes back, I'd bet there's someone around who has the required info - they're all mostly one-pagers - and a scanner that would produce an email-able version. The business model from that part of the world has always dropped any kind of service on 'old' stuff real fast.
