I have a 2002 Trek 1000 which I am currently riding. Am in the process of shopping around to get a new bike but its been taking longer. However Im debating getting a 105 or ultegra group off of ebay and upgrading the components on trek 1000 as an interm solution and then also maybe to keep it to use as a trainer bike.

105 will save money and be fin on that bike and as a trainer bike.

Probably better bang to buy a new/used bike with higher grade components rather than just the components themselves, expecially at the end of season when people are trying to unload thier "old" bikes in favor of next years models. However 105 is a significant step up from sora and would a worth while upgrade. Could keep the bike as your rain bike.

There's a sad reality that most component upgrades do a better job as wallet downgrades. If you think going from Sora to 105 is going to be something miraculous then you're kidding yourself. If the plan is to buy a new bike then save for that. Keep the Trek in good condition and replace parts when they break.
