I will be racing the Mt Evans Hill Climb on Saturday. My road bike has 53/38 chainrings and 11x32 cassette. I'm concerned I may not be able to push 38x23 up a 6% grade at 12,000-14,000 feet of altitude. The crank is 130bcd so it is not possible to put a smaller chainring up front.

My CX bike has 50/34 and 11x32. I'm certain I can push a 34x32 up the mountain. The crank won't fit on the road bike (BB30 vs BB386).

But the stock Oval wheelset on my Fuji CX bike are 1950g. I have Stans IronCross ZTR wheels that are 1550g. I'd really like to use the Stans wheels to save the weight, but the sidewall says "Max pressure 45psi with a 35mm tire".

The psi max is probably based on CX course conditions, right? Bumps and possible jumps and re-mounts and such. This is a road race with some rough pavement, but nothing like CX.

Could I run the Stans IronCross ZTR wheels with road tires at 80psi? 90psi? 100psi? FYI - I weigh about 170 pounds.

Correct, the Stan's IronCross wheels are not setup for road and will not handle over 45psi.
