I am installing a set of UT cranks for the 1st time, I have the BB cups installed, should I put grease in the cups where the bearing sets sit from the UT cranks? if yes, how much, is there too much?

Yes, you should grease all metal to metal contact areas. You can't put too much in. All it will do is squeeze out.

As for the cup installation, I hope you read the threads on how to do it right. Face the BB shell, meassure the BB shell width to be sure it's in spec, grease the threads and torque to 35Nm. Don't use the loctite method.

Also liberally grease (or anti-seize) the radial splines on the crankset's center "Hirth joint" , and the fixing bolt's threads ... will contribute to longevity and quiet operation.
