good god, there are more threads about this than whether you should wear undies under your shorts. please, experiment w/ the 'search' function.

as for your tires, you don't need high pressure. at your weight you need bigger tires. absolutely, for sure, no doubt about it. 25mm min, ideally 28mm rear/25mm front IMO. i'd use 100psi rear/85ish front for 25mm, closer to 85/85 if you use the larger rear tire.
don't inflate your tires to a pressure that will prevent pinch flats, inflate them to the pressure that gives you the ride quality and traction you want. it's up to you to avoid potholes and stones that cause flats. it's also fine if you miss one every now and then and get a flat. it's gonna happen...nothing you can do about it. enjoy your ride for the 99.999999% of the time you're not flatting.
