2 pairs of wheels or one pair of do it all wheels?

So I have a few different options availiable to me for the new steed.

American Classic sprint 350 (09 Edition) (1410g) for racing and Shimano Rs-10 as training wheels.

or

AC 350 rims laced to Dura Ace hubs (08) as a do it all wheelset. (~1500g)

or

Open pro/1.1 on the DA hubs.(~1620g)

or

Fulcrum Racing 3's (~1650g)

I weigh roughly 145lbs, and specialize in hill climbing, but also race crits in the warmer months.

Being a climber, the low weight of one of the first two options really appeals to me. All these options work out to be a similar cost including the AC/rs-10 combo. So money doesnt really change much. I have instantly paired up the AC's with the old wheelset because I wouldnt ride them in the rain or use them everyday with their track record. (Even though they have fixed most problems)
