I have a mid-2000’s Centaur group. I wanted to order Kool Stop brake pads but I am a bit confused by the offerings. There is a Kool Stop “Super Record Campi 2011” model which says it’s for Campy skeleton brakes but also retrofits post-2000 brakes. There is also a “Campi 2000” model which fits Campy year 2000 and up. Is there any difference between these pads?

The Campi Super Record pad has the indent for the setscrew in the Super Record holder, the Campi 2000 doesn't. Either will work on Campag holders that don't have a set screw.
