I'm 6'5 and wear XL voler bibs. Good quality, good price.

If you buy from velowear, they send a postage paid return envelope. If you don't like it, it is real easy to send back. Plus, their customer service is just about the best around.

I use to think I could only wear regular shorts but I swear by bibs. I am 6'8" and have found most bibs fit me except for a few. Like you I am rail thin and super tall make it hard to fill out my clothing so to speak. Also some Euro companies offer a bit of different sizing but you will deff. be an XL for comfort and strtch from th shorts to your shoulders. I will suggest Sugoi, Biemme, and Voler as great fitting for my size and needs. Pearl Izumi, and Giordana seem to run real small every time I have tried or purchased their clothing.
 
I'm 6'3" with a 32" waist and I never did like the way Med. bibs fit. I don't like the legs to be too short and it seemed like all medium bibs did that. I wear Large bibs and don't seem to have any problems. Good quality bibs seem to fit ok as far as not being too loose or anything and yet don't ride up to far on the length.
 
Tough to generalize...

between all our body types, as I find I differ significantly from most riders my size & height.

I'm 6'4", 205 lbs. and I wear size L bibs from all the Euro manufacturers (Castelli, Santini, Assos, etc.) and size M from Pearl and Nike. I'm more concerned about fit in the crotch than about strap length; apparently other people my build prefer the longer straps of a size larger- but I can't stand having the pad wiggling around between my legs.

As long as you don't Ebay it, you should be able to return whatever you get if the size is incorrect, and you'll only be out a little more postage.
